Mango: fleshy, firm, juicy and perfumed mango is perfect for sorbets. Mango comes from India, where it is sacred for Hindus and is used to decorate the temples. It can be green, yellow or red, according to the variety (not to its ripeness). The mango we choose is the Indian Alphonso variety. It, must be perfectly ripe, with firm and sweet flesh of a beautiful orangey-yellow hue, and contain less fibers as possible. Have you ever heard of perfumed ice cream?
